The Vista Room and its supporting facilities are teaching/learning laboratories providing learning experiences for students enrolled in foodservice management courses for Hospitality Management, Dietetics, and Family & Consumer Sciences.


Specific objectives of the facilities are to:

  • provide state-of-the-art facilities and an environment for students to gain hands-on experience while learning the fundamentals of food management, production, and services
  • accommodate current and future demands of the foodservice/hospitality industry for graduates majoring in foodservice management, hospitality management, and dietetics

Program Activities

The Vista Room functions as a restaurant for fine dining, acclaimed for its exquisite cuisine and service. As laboratory components in several courses (Foods, Production and Service; Management of Quantity Food Production; and Restaurant Management) students prepare the luncheon menu items under the supervision of the chef and faculty. Vegetarian meals may be prepared upon request at the time of your reservation and again at meal service.

Chef Dan Honan

The delectable meals are prepared under the supervision of Chef Daniel Honan. The Vista Room features California cuisine, serving the highest quality food prepared from fresh ingredients purchased from reputable vendors. Chef Dan was trained in Switzerland and Ireland and has worked in the restaurant business for the past 28 years, including Ernie's Restaurant, St. Francis Hotel, and Maxwell's Plum. Chef Dan has been the executive chef at the Vista Room since 1998.


The state-of-the-art foodservice laboratories were completed in 1995 with foodservice equipment donations from 20 different companies including Miele Appliances Inc., Atlas Metal Industries, Berkel Incorporated, Belves company, Cleveland Range Inc., EcoLabs, Hobart Corporation, In-Sink-Erator, Libbey Inc., Market Forge, Oneida Food Service, Ptico Frialator Inc., Randell Food Service Equipment, Seco Products, Stero Company, Superior Coffee and Foods, Vulvan Hart, Western Pacific Distributions Inc., and Wilder Manufacturing to equip both the Food Study Laboratory and the Quantity Food Production Laboratory.
